Create design onlineAbout Mad Hatter Pepper
Mad Hatter is an F1 *Capsicum baccatum* pepper with distinctive flattened, disc-shaped fruit and a mild flavor. The vigorous, indeterminate plant produces green fruit that ripens red, and the flavor becomes sweeter as fruit matures.
## Site and Growth
Plant in full sun after frost danger has passed. PanAmerican Seed describes a mounded, upright plant about 36–48 inches tall and wide, with 24–36 inches between plants. The breeder recommends in-ground planting and support for its large growth. Summer is the listed bloom season.
## Fruit and Use
The unusual peppers are about 2–3½ inches long and 2–2½ inches wide. They are crisp with a delicate floral scent; in hot, dry climates, some fruit may develop slight heat near the seed cavity while the outer wings remain sweet. Harvest green or fully ripe according to preference.
## Maintenance
Set plants in fertile, well-drained soil once the soil has warmed and frost danger has passed. Water deeply and maintain even moisture during flowering and fruit production. Stake the plant as branches fill with fruit, and harvest regularly.
