Cynara cardunculus, commonly known as cardoon, is a vigorous herbaceous perennial celebrated for its architectural presence and silver-gray, deeply lobed foliage. This Mediterranean native forms a substantial clump of arching, spiny leaves from which tall, sturdy stalks emerge, topped with striking violet-purple thistle-like flower heads. It thrives in full sun and well-drained soil, reaching impressive heights. While its blanched stalks are a culinary delicacy, it is frequently grown as a bold ornamental focal point in gravel gardens or mixed borders.
