About Cardoon

Cynara cardunculus, commonly known as cardoon, is a vigorous herbaceous perennial celebrated for its architectural presence and silver-gray, deeply lobed foliage. This Mediterranean native forms a substantial clump of arching, spiny leaves from which tall, sturdy stalks emerge, topped with striking violet-purple thistle-like flower heads.
