About Pinstripe Egg

Pinstripe is a compact baby eggplant selected for its oval, purple-and-white striped fruits. The upright, branching plant has silver-gray foliage and is predominantly spineless, giving containers and small vegetable beds a useful ornamental crop as well as food. ## Growing Grow this warm-season annual in full sun after frost danger has passed and the soil has warmed. University of Maryland Extension recommends at least six hours of direct light for eggplant. Syngenta lists Pinstripe at about 22 inches tall by 18 inches wide, with a compact habit suited to containers or open ground. Keep soil moisture consistent through flowering and fruiting. ## Harvest Fruits are listed at about 3–4 ounces and mature roughly 60–65 days after transplanting. Pick them young for baby eggplant or leave them to reach a larger size; cut mature fruits from the plant while their skins are still glossy and firm. Regular picking supports continued flowering and fruit set. Pinstripe is suited to grilling, roasting, and stir-frying. ## Maintenance Protect plants from frost and cool weather, and water deeply when the soil begins to dry. Harvest with clean shears rather than pulling fruit from the branches.
