Honeycrisp is a University of Minnesota apple known for its exceptionally crisp, juicy flesh and balanced sweet-tart flavor. Its red dappled color develops best in cooler climates with good sun exposure, and harvest timing varies by region.
## Fruit
The medium-to-large apples have cream-colored flesh and can store for several months when kept cool. The University of Minnesota lists fresh eating, cooking, and salads among their uses. In east-central Minnesota, harvest typically runs from mid-September into early October; local climate shifts the season.
## Growing Conditions
Honeycrisp prefers cooler apple-growing regions and is rated for USDA Zone 4 by the University of Minnesota. It blooms in mid to late season and has a somewhat spreading habit. A central-leader training system suits the tree, though early bearing can make staking or fruit thinning useful. Rootstock affects vigor and eventual size, so choose one suited to the site.
## Maintenance
Watch for bitter pit and soft scald, especially during storage, and avoid storing the fruit at freezing temperatures. The cultivar is very resistant to apple scab, while susceptibility to fire blight varies with tree age, rootstock, and disease pressure; it can also be susceptible to flyspeck, sooty blotch, and mildew.
