About Katz Apricot Matthiola

Katz Apricot is a cool-season stock with light peach flowers, a sweet fragrance, and long stems suited to cutting. Johnny’s identifies the exact selection as Matthiola incana Katz Apricot and lists a 24–32 inch plant height; the Katz series produces a single flowering stem per plant ([Johnny’s Selected Seeds](https://www.johnnyseeds.com/flowers/stock/katz-apricot-stock-seed-3698.53.html)). ### Site and flowering Plant in full sun and well-drained, moderately rich soil. Katz is an early-blooming, one-cut series for spring or fall weather; hot conditions can shorten its display. It works in a cutting bed, border, or container where the long stems can be supported. Flowers are fragrant and edible, and may be used as a garnish. ### Starting and harvest Start seed under cover about five to six weeks before transplanting, or sow outdoors after frost danger has passed. Allow room for air movement and use horizontal netting when plants are tall, exposed to rain, or grown in warm conditions. Harvest when roughly one-third to one-half of the florets on a stem have opened. ## Maintenance Do not pinch the plant: it produces one flowering stem, and pinching can stop flowering. Keep the root zone evenly growing in freely draining soil, and harvest stems promptly for bouquets. Remove spent plants after their cool-season flowering cycle.
