Lemon balm (*Melissa officinalis*) is an upright, bushy perennial herb with bright-green, lemon-scented leaves and small creamy-white flowers in summer. Its edible leaves flavor teas, soups, and salads, while the nectar-rich blooms attract bees and other pollinators. ([NC State Extension](https://plants.ces.ncsu.edu/plants/melissa-officinalis/))
## In the Garden
Plants typically grow about 18–24 inches tall and may spread by rhizomes and self-seeding. Use lemon balm in an herb garden, border, patio container, or as a low groundcover; a container helps keep it from spreading into nearby beds. The leaves have their strongest lemon fragrance when bruised or crushed.
## Growing Conditions
Grow in full sun to partial shade and in well-drained soil. It tolerates a range from moist to dry conditions and drought after establishment, but avoid leaving new plantings dry. NC State lists USDA zones 3a–7b and notes that the plant can naturalize beyond gardens.
## Maintenance
Remove spent flower stalks to tidy the plant and encourage fresh growth. Divide or lift rhizomes where they are moving beyond their allotted space, and harvest young leaves as needed.
